Angela's Sugo di carne (for pasta)


2 small onions; 1 celery stalk; 2 carrots; 2 garlic cloves; 1 sprig parsley; 300 g ground beef; 300 g ground pork; cumin, cloves, salt, paprika; 700 g tomato sauce (e.g., Longobardi — il sugo della casalinga)


Chop the onions, celery, carrots, garlic and parsley in a mixer.
Heat at low temp with plenty of olive oil till slightly mushy and transparent but not brown.
Add 1 tbsp. hot water.
Add the meat & cook till brown.
Add 1/2 glass white wine and let it evaporate.
Add the spices.
Addthe tomato sauce.
Rinse the jar with 1/2 cup water and add to the sauce.
Bring to a boil and then cook at a low temperature for 1 hour.
